Snack salad with eggplant Ingredients:
Eggplant - 3 pcs.
Tomatoes - 200g
Green onion
Salt / pepper (to taste)
Olive oil - 3 tablespoons
Starch - 3 tablespoons
Chili pepper - 0.5 tsp (to taste)
Preparation:
Slices of eggplant and soak them in salted water for 30 minutes. Take out, dry, put into a bowl, pour the starch. Add salt, pepper and mix.
Transfer to a heated and greased frying pan, fry until tender.
In a deep container combine eggplants with green onions, red onions, tomatoes, mustard and olive oil. Add chili to taste and do not forget to salt.
