Sweet potatoes are lower in anti-nutrient lectins and higher in carotenoid antioxidants than their white counterparts.
White potatoes are nightshades and can cause inflammation in people who are sensitive, like me.
If you eat white potatoes (or any nightshade vegetable) and wake up the following day with achy joints and a muffin-top, this might mean you have issues with nightshades too, and sweet potatoes will be a better option as a carbohydrate source for you.
