Jewelled Cauliflower
1 T Fat/oil of choice (coconut oil)
1 small red onion sliced
1/2 cauliflower finely chopped
1 clove garlic finely sliced
1 teaspoon tagine spice mix
1/2 teaspoon turmeric
Seas salt and ground black pepper to taste
12 dried cranberries or raisins
12 toasted and chopped macadamias
Pinch of rose powder or a dash of rose water
2 T of chopped coriander
2 T chopped mint
Drizzle of pomegranate molasses
Tagine spice mix (1 teaspoon paprika, pinch ground cardamom, pinch ground cloves, pinch chilli powder, pinch cinnamon, pinch dried mint)
