Why we capitalize ‘White’:

It's simply the correct usage in English.
White, when used as a colour is a common-noun, which isn't capitalized; however when used as an ethnonym (racial term) it is a proper-noun, which is always capitalized in English.

Names of racial and ethnic groups (ethnonyms) are treated as proper-nouns, which are nouns that designate a particular being or thing; they are always capitalized to signify they are a name and not to confuse the word with non-name definitions (a white cup [a cup that is coloured white] versus, a White cup [a cup related to the White race]).

Decapitalizing a proper-noun is incorrect English, which is intentionally meant to be disrespectful, as to imply it isn't an ethnonym and that the White race doesn't exist.
Institutions and media are smart enough to understand how to use proper-nouns, they are simply anti-White.
