"What is the best way of improving your IELTS Speaking?"

I hear you ask. I think for me, there's no topping interviews as far as this question goes. For one thing, they are fun. And for another, they are full of chunks of language that, if used accurately, will knock your examiner's socks off.

Unlike IELTS Speaking, interviews are a real reflection of real life English. When you are in an English speaking country trying to strike up a friendship with someone, you will be probably not be waited for a full minute until you finish talking. Rather people will constantly interrupt while you're speaking, just like in interviews. But this doesn't necessarily mean that they are not useful for your IELTS Speaking; if you can speak well when you are being interrupted (in real life), you sure as hell can speak to the examiner who silently listens to you most of the time. This suggests that we should watch interviews on a regular basis.

Also, you need to make sure that the interviews you are watching are interesting. You can't force yourself to watch something boring and irrelevant. To that end, watching the interviews of your favorite celebrities, for example, can be your best bet. Because you want to know what's happening in their lives, you cannot stay not engaged while watching the video, thereby picking up some great language from it. All you need to do find such interviews is type in the name of the celebrity of your choice on YouTube and add 'interview' next to it. For example, 'Tom Holland's interviews'. Simple as that. I personally enjoy watching Late Night shows or any other entertainment show because they are fun. You can find the list of my favorite YouTube interview channels here.
