FIGJAM!!!

F$&k I’m Good, Just Ask Me.

So easy to make.

1. Walk along a beautiful creek and find an ancient fig tree (often people have them along fence lines and if it hangs over the fence it’s free for all)

2. Pick 1kg of figs (roughly 20 figs). I picked extra to eat on the way home.

3. Roughly chop figs and put in a bowl with the skin on. Add 500 grams of organic castor sugar. Squeeze in a full lemon and then put in the peels. Add a cinnamon stick. Add a vanilla bean stick, but cut out the seeds first. Leave the bowl covered overnight.

4. In a large pan heat the mixture until all sugar dissolves. Then boil the mixture on a low heat for 45 minutes, stirring throughout.

5. Remove the lemon rind, cinnamon and vanilla. Use a fork or masher to mash the figs roughly.

6. Stir the jam for an extra few minutes and then let it cool. Try not to eat all jam as you put it in to jars.

Stays fresh in the fridge for 3 months sealed or two weeks after being opened (no preservatives).
