With regards to devices this is what I use & recommend:
Smartphones:
Refurbished 2017 Google Pixel 2, low grade, ~£80.

Ironically, Google devices are some of the most private & secure IF you install a custom operating system. I use
CalyxOS, it wasn't too hard using their new installer & guide.

I've been very impressed by it.
It's pretty much the same as stock
Android but with all the crap taken out, permissions & settings that actually work and a lot of good stuff pre-installed. You end up with all the stuff you want from an
Android phone; alternative app stores, privacy browsers, encrypted messengers, without any
Google Services at all.
I've had zero issues and even though it's running on a relatively old phone, it's the fastest thing I've used.
It's encrypted as standard, I particularly like the words on the default lock screen. A clear gel case from a Chinaman with a Grandma Towlers sticker under it is de rigueur, see photo above .

Return to tradition! Embrace the old Nokia 3310, ~£18 off ebay (with charger).
When buying off eBay, scroll to the bottom of the listing to check the business sellers name & company details. Check the details on Companies House if necessary.

SIM cards
For my main smartphone I've long used

The SIM only plans are only a few quid and they refund you for what you don't use; not very jewish I'm sure you'll agree.
For the second smartphone use whatever you like.
For the two burner phones you can pick up free pay as you go SIM cards from corner shops, supermarkets, Cex, all sorts of places.
Because we are using 2G phones, I recommend
O2 because they are the only one which still operates on both the 900MHz and 1800MHz bands, a big advantage for getting signal.
They also come in handy on trips when your regular smartphone has no signal.
