Coffees produced in Panama are often known for their quality due to its exceptional terroir - rich volcanic soils, high altitude, weather systems driven by the Pacific and Atlantic and a series of ridges and valleys.
This particular Gesha lot is from the Summer plot which produces shade-grown coffee from 12 year old trees. To produce this honey processed lot, ripe cherries are picked and then de-pulped before being left to dry on raised beds. These cherries are also turned frequently to allow the honey to develop, creating a unique sweetness along with the high-altitude acidity combined with a deep mellow body.
