Pistachio Honey Baklava Cake
The most delicious baklava cake with honey cake layers, pistachio and honey filling, and pistachio buttercream frosting!
Honey Cake Layers:
1 cup sour cream
4 large eggs, at room temp
1 cup honey
3/4 cup cooking oil, such as canola
2 tsp vanilla extract
2 cups all-purpose flour
2 tsp baking soda
2 tsp baking powder
1/4 tsp salt
Pistachio Buttercream:
1 cup shelled, salted pistachios
2 tbsp heavy cream
3 cups unsalted butter, softened at room temp
2 tsp vanilla extract
4 cups confectioner's sugar
Cake Filling:
1 to 1 1/2 cups finely diced pistachios
1 cup honey
