This is a joke relying on the different definitions of the word 'miss'. My ex-wife still misses me sounds like 'she feels sad because she can no longer see her ex-husband' but after the second phrase 'Her aim is gettin' better!' you understand that she fails to shoot him (people are allowed to have guns.

miss (verb) - to fail to hit, catch, reach, etc. something:
'The bullet missed her by about six inches.'
'She threw a plate at him and only narrowly missed.'

aim (noun) - the action or skill of pointing a weapon at somebody/something:
'The gunman took aim (= pointed his weapon) and fired.'
