Recipe idea of the week! CHEESY BABY MARROW POLENTA BAKE. Cook polenta in salted boiling water. Pour into sprayed oven pan about 2 cm thick. Cool completely. Chop onion and fry, add sliced baby marrows, tomato puree or sundried tomato pesto. Simmer until marrows are tender. Add chopped spinach, fresh or dried herbs and salt to taste. Simmer until spinach has just wilted. Top the polenta base with the baby marrow mixture. Sprinkle with a little strong grated cheese, parmesan or vegan cheese. Grill until cheese has melted. Garnish with fresh rocket or basil leaves. Easy, simple and nourishing!
