Recipe idea of the week. RICE PUDDING. Our kids love this recipe! I chose to use Jasmine rice this time. (Brown rice is a healthier option, but not as decadent.) Soak quarter block of compacted dates in warm water for 30 min. Start cooking the rice according to package instructions. Pour off date water and mash dates. When the rice is almost done, add cinnamon and cardamom spices, mashed dates, some coconut cream. Mix well, remove from heat. Cover with a lid for roughly 10 min. Mix with a fork, serve with extra coconut cream. (Sweeten with extra dates or use less for next time.) A little indulgence for a cold night in Dullstroom... healthamplified.co.za
