Eggs Benedict

Ingredients:

Bread - 2 slices.
Egg yolks - 3 pcs.
Lemon juice - 1 tbsp
Salt - pinch
Butter - 70 gr
Bacon - 2 slices
Pesto sauce (grease the bread)
Spices (to taste)

Preparation:

For the hollandaise sauce:
Separate the yolks from the whites, put in a water bath over medium heat, add the lemon juice, butter, and salt and stir until thickened to a creamy consistency.Then sprinkle the bacon with paprika and fry in a pan without oil until crispy. Cut the bread into medium slices and brown it in a pan. Boil a poached egg.
To assemble: grease the bread with pesto sauce, then lay the bacon, poached egg and pour a lot of sauce, at the end you can sprinkle more greens.
