Pancakes with salmon, avocado and cottage cheese

Ingredients:

For the pancakes:
Milk - 500 ml
Eggs - 3 pcs.
Sugar - 2 tbsp
Salt - 1/4 tsp.
Soda - 1/4 tsp.
Flour - 220 gr
Vegetable oil - 2-3 tbsp
For stuffing:
Cottage cheese - 150 gr
Salmon - 250 gr
Avocado - 1 pc

Preparation:

Beat eggs, salt and sugar with a whisk, add 1/4 of warm milk.
Sift in the flour and baking soda, and mix well to prevent lumps.
Add the rest of the milk and mix well. Add vegetable oil, stir again and leave the pancake batter to "rest" for 15 minutes.Heat a well heated greased pancake pan.Slice salmon and avocado.
Assemble pancake. Spread cottage cheese on pancake, place salmon and avocado.
