Stroganoff pasta with mushrooms
Ingredients:
1 cup cashews 1 cup water 300g mushrooms of your choice pepper 3 pcs garlic 1/2 onion 400 grams of pasta 3 tbsp olive oil 2 tsp. smoked paprika 1/2 cup whiskey a few sprigs of parsley
Preparation:
Add cashews, 1 cup water and a generous pinch of salt to a blender and whisk on high speed until smooth. Bring the pasta water to a boil. Finely chop the garlic and thinly slice the red onion. Prepare the pasta. Heat a skillet to medium heat. Dry roast the mushrooms for 4 minutes. Season with salt and pepper. Then add the garlic and onion. Add olive oil and smoked paprika. Stir the pan. Then add the whisky. Roast for 3 more minutes. Add the cream of cashews and season with salt and pepper. Stir the pan. Then dilute the sauce by adding 1/2 cup water. Cook for another minute. Place the pasta on a plate and pour the mushroom sauce on top. Garnish with fresh chopped parsley.
