Stuffed chicken thighs

Chicken thighs - 1 kg
Mushrooms - 300g
Bell pepper - 1/2 pc
Parsley - bunch
Butter - 50 gr
For marinade:
Vegetable/corn oil - 150 ml
Smoked paprika - 1 tsp.
Black pepper - 1 tsp.
Salt (to taste)

Preparation:

First we make the marinade. Next, we beat the meat and marinate it in our mixture. We prepare the stuffing: in a frying pan we melt the butter and fry the mushrooms for 5 minutes (do not cover with the lid), then we send to them all the remaining vegetables, 3 minutes is enough for them to brown. Add the parsley and remove from the heat. Take the chicken thigh skin side down, put our stuffing (you can add Parmesan, you get space), wrap it in a roll and put it in a mold. We put it in the preheated oven to 190 degrees for 40 minutes.
