Pumpkin pudding with apple and sultanasIngredients:200 g pumpkin
100-150 g apple
50ml skim milk
1 egg white
20 g ground oats
15-20 g sultanas
cinnamon
Preparation: Peel the pumpkin and apple, remove the seeds and core and cut into cubes.
In a small saucepan, put the pumpkin, add milk and braise on low heat for 10 minutes.
Then add the apple to the pumpkin. Braise for about 10-15 minutes more.
Chop stewed pumpkin and apple into a purée with a blender. Leave to cool slightly. Add the ground oats, sultanas and cinnamon.
With a mixer whisk the egg white to a froth. Gently mix the pumpkin-apple puree with the whisked egg white.
Place in a mould and bake in a preheated oven. Bake for about 30-40 minutes at low temperature (about 180 degrees).
