The ingredient behind our local favourite grass jelly is the Chin Chow (Platostoma palustre)! The dried shoots are boiled in water with sugar and agar. Next, the liquid is strained and left to cool. Not only is grass jelly thought to have a cooling effect for the body, it is also nice to eat! Yummy!
