Curry Soup Ingredients:
350-400 g of any green salad leaves
1 medium bunch of coriander with stubs
1 small bundle of green onions
50 g soft roasted pumpkin seeds
1 package (400 ml) coconut milk
1 Tbsp. - 1 Tbsp. green curry paste
1 Tbsp. coconut oil or other vegetable oil
salt and/or soy sauce
Preparation:
Chop green onion and coriander not too coarsely.In a saucepan heat oil, put curry paste and seeds, fry for 1 minute. Add cilantro and green onions, stir-fry for 1 minute.Add coconut milk and 400 ml water, bring to the boil, add lettuce and bring back to the boil. Whisk in a blender, season with salt and/or soy sauce.Serve with a sprinkling of cilantro and pumpkin seeds.
